The new menu is based on comforting textures, slow cooking, full-bodied juices, and precise pairings, designed for the seasons when we sit down to eat and linger over the moment.
The tone is set right from the starters
A delicately prepared local veal tartare dialogues with the sweetness of butternut squash and the unexpected freshness of red cabbage ice cream. Grilled rock octopus plays on contrasts between sweet potato, haddock, and grapefruit, bringing a livelier, more maritime interpretation to the season.

Dishes built to last
The dishes are part of a confident winter cuisine, where indulgence comes through mastery. The celeriac pie with Melanosporum black truffles stands out as a central, deep, and structured dish, while the roasted scallops, paired with sweetbreads and Jerusalem artichokes, offer a more complex, almost gourmet interpretation.
The seafood theme continues with the confit pollock, enhanced by sea lettuce, nori, and sea urchin butter, while lovers of larger cuts will turn to the chest-roasted squab, 24-hour confit veal cheek, or grilled Brittany lobster, seasonal dishes par excellence, designed to be savored slowly.
The highlight is the Grade A4 Wagyu beef ribeye, offering a rarer experience, accompanied by buckwheat spätzle and dashi broth, striking a balance between power and precision.

A special Valentine’s Day treat
In keeping with this winter menu, Les Roses Restaurant will also offer a special Valentine’s Day menu, served on February 13, 14, and 15, 2026. This treat is designed for those who wish to mark the occasion with an exceptional meal in a cozy and elegant atmosphere.
Available as a four- or five-course meal, this menu showcases the season’s signature ingredients: Melanosporum truffles, langoustines, Aquitaine IGP caviar, scallops, sweetbreads, and smoked beef with juniper berries. The meal concludes with a 72% Kayambe chocolate dessert, enhanced with mango, ginger, and a touch of Espelette pepper, followed by a selection of petits fours.
This menu is designed to be a special moment, in keeping with the spirit of Les Roses: precise, gourmet, and resolutely focused on the pleasure of sharing.
