    15.10.2026 News

From October 15, Restaurant Les Roses invites guests to discover a new menu inspired by the finest seasonal ingredients. Chef François Jagut showcases mushrooms, squash, chestnuts and quince through generous yet refined cuisine, reflecting his passion for bold and contrasting flavour combinations.

    Starters Combining Finesse and Character

The opening dishes set the tone with carefully crafted combinations of textures and flavours.

The Semi-Cooked Foie Gras is paired with tuna belly, Jerusalem artichoke and puffed buckwheat. The Flame-Seared Mackerel is complemented by pistachio pesto, citrus fruits and fregola sarda.

The Raw and Cooked Mushrooms are enhanced by a confit egg yolk, a button mushroom crisp and porcini mushroom ice cream.

Autumn Cuisine Inspired by Land and Sea

The main courses continue this exploration of seasonal ingredients and creative flavour pairings.

The Chickpea Gnocchi, served with aged Gouda, tomato sorbet and fig leaf pistou, offer an original plant-based combination.

From the sea, the Bone-Aged Monkfish is served with gnocchi and a sea urchin emulsion, while the Roasted Scallops are paired with saffron potatoes, samphire and a lemon condiment.

The Brittany Lobster also takes centre stage, accompanied by butternut squash ravioli, Wagyu cecina and dashi broth.

Meat lovers can choose between the Pigeon Pithivier with foie gras, baby carrot pickles and Yellow Chartreuse sabayon, the Venison Fillet with beetroot and sake, or the Aged Beef Fillet, Seared and Braised, served with celeriac, chestnuts and quince.

To conclude the dining experience, the desserts also celebrate contrasting flavours and textures.

The 70% Andoa Chocolate Crémeux combines butternut squash, bergamot and roasted milk ice cream.

The Confit Conference Pear is served with almond shortbread, celery and pear sorbet.

Cheese lovers can also enjoy the traditional Selection of Aged Cheeses from the Cheese Trolley, accompanied by chutney, jam and homemade crackers.
