After its summer break, Restaurant Les Roses reopens its doors with a new menu to discover from 4 September 2026. True to its philosophy, the restaurant continues to showcase exceptional ingredients, refined techniques and flavour combinations that are as precise as they are original.
A refined and characterful introduction
The menu opens with a selection of starters that reflect the diversity of inspirations behind the cuisine at Les Roses.
The Wagyu Angus Beef Cecina is served with tomatoes selected by Sandrine, pickled chanterelles and piquillo pepper sorbet, while the Lightly Poached Langoustines reveal more delicate flavours with lacto-fermented apricot, artichoke and a sake sabayon.
For a more plant-based option, the Green Pea Tartlet returns in a new interpretation, combining almonds, Kalamata olives and grilled watermelon sorbet.

Cuisine that showcases the finest ingredients
The new menu continues its dialogue between land, sea and plant-based cuisine.
Lovers of plant-based dishes can discover the Hay-Roasted Celeriac, served with walnuts, roasted porcini mushrooms and a kefir milk emulsion. From the sea, the Butter-Confit Cod is paired with compressed tomatoes, courgettes and bouchot mussel ice cream, while the Aged Red Mullet from the Brittany Coast is enhanced with foie gras, harissa jus and a piquillo pepper sabayon. Guests looking for exceptional produce can also enjoy Brittany Lobster, prepared with kombu, saffron and tarragon.
Meat dishes also take centre stage, with Stuffed Rabbit Saddle, Grilled Limousin Lamb Saddle, and Aged Beef Fillet, served with a foie gras mille-feuille, red wine sabayon and a blackcurrant-horseradish condiment.

Perfectly balanced desserts
To round off the meal, the traditional “Formaticus Selection” Cheese Trolley remains available for cheese lovers.
The desserts play with contrasts and textures, including the Roasted Black Figs, paired with bissap, almond crémeux and laminated brioche, as well as the Millot 74% Chocolate Biscuit, complemented by grilled sweetcorn, smoked vanilla and cocoa sorbet.
